History & Origin Story: Cinco de Mayo

Battle of Puebla

Cinco de Mayo, or the Fifth of May, is a holiday that commemorates the Mexican army's unlikely victory over French forces at the Battle of Puebla on May 5, 1862. This battle occurred during the Franco-Mexican War, which was sparked by Mexico's inability to pay back debts owed to European countries.

Despite being outnumbered and outgunned, the Mexican army, led by General Ignacio Zaragoza, was able to successfully defend the city of Puebla from the invading French forces. The victory was a source of great pride for the Mexican people, who saw it as a symbol of their country's resilience and determination.

While the Battle of Puebla did not mark the end of the Franco-Mexican War (which would continue for several more years), it was a significant moment in Mexican history and remains an important holiday in Mexico and for Mexican-Americans in the United States. Cinco de Mayo is celebrated with parades, music, food, and other festivities, and serves as a reminder of the bravery and determination of the Mexican people in the face of adversity.

🌮 Chorizo Breakfast Taco w. Homemade Flour Tortilla

Breakfast Taco on homemade Flour Tortilla

What's up, tortilla lovers! If you're a fan of Mexican food (and who isn't?), you know that nothing beats the taste of a fresh, warm flour tortilla. Sure, you can grab a pack from the store, but where's the fun in that? Making flour tortillas is easier than you might think. All you need is a few basic ingredients and a little bit of elbow grease. Trust us, it's worth it. Once you taste that first bite of a homemade tortilla, you'll be hooked. In this recipe, we'll guide you through the steps to make your own tortillas that are soft and fluffy. Usually flour tortillas are made with vegetable oil or lard. I used butter in this recipe, because...well I think its more delicious! When you’ve made a whole batch, we’ve got the perfect breakfast taco recipe to pair with these yummy guys.

🪅 Conchas (Pan Dulce)

Are you tired of overly sweet baked goods? Do you crave something with a more balanced flavor? Look no further than my Conchas recipe! Unlike some traditional recipes, my version is not overly sugary, making it the perfect choice for those who prefer a more subtle sweetness. But don't worry, these buns still pack a flavorful punch! I've used a blend of cinnamon and fresh ground espresso to give the brown Conchas their distinctive color and rich, aromatic taste. And the best part? I skip the food coloring entirely, so you can enjoy these treats without any artificial additives. Whether you're a seasoned baker or a newcomer to the world of baking, this Conchas recipe is sure to delight your taste buds and impress your friends and family. So, let's get started and indulge in the delicious flavors of Mexico!

P.S Zikki is absolutely obsessed with this recipe, so I know I did something right!😂

🍳 Shakshu-quilies w. Homemade Corn Tortilla Chips

This is a personal favorite of mine. Are you ready to take your taste buds on a flavor adventure? Introducing Shakshuquiles - the ultimate fusion of Middle Eastern and Mexican cuisine! This dish will tantalize your senses with its unique combination of spicy tomato sauce, perfectly poached eggs, and crispy tortilla chips. We've taken the traditional North African and Middle Eastern Shakshuka and given it a twist by adding crispy chilaquiles - a popular Mexican breakfast dish - to create the ultimate breakfast, brunch or dinner dish. Each bite is a journey through a myriad of flavors and textures, with the tangy tomato sauce complementing the richness of the eggs and the crunch of the tortilla chips. Shakshuquiles is a dish that will awaken your taste buds and leave you feeling fully satisfied.

In case you don’t want to buy your tortilla chips or feel like having some awesome Baja fish tacos at home, I’ve also attached our recipe for fresh corn tortillas!

Hope you have a weekend full of YASSS! Until next Thursday Gingis.

Love, Ben & Zikki xx
