The sun has come out here in Israel and we are celebrating! We just returned from a family trip to Egypt, where we had a lovely time stepping away from the intensity of our every day. We are back, rejuvenated, and ready to share some sexy recipes with you all this week + we have a little something extra for you all the way at the end of the YASSSletter today!

Last week we mentioned our trip to the Galilee and you all were intrigued and ready to try the recipes that we experienced in the north. So without further ado, this week we've got some very special recipes on the Q.

🌹 Knafeh

Last week when we traveled up to Western Galilee - we had a chance to stop by at an incredible little Knafeh place, where this well known Arabic dessert was made to perfection. The kataif (string like dough) & cheese married together as they pan fried in a generous amount of butter turning the dough crisp and the cheese melty. The smell was unreal.After frying the knafeh, rose water simple syrup is poured on top of the dessert saturating the dough and cheese. The dessert is then finished with crushed pistachio, raisins, pomegranates, and rose petals. YASSS!

Cool food history fact: Knafeh has a long history in the Middle East, going back centuries. Legend has it that knafeh was originally created, and prescribed by doctors, to satisfy the hunger of caliphs during Ramadan.🫓

🫓 Malawach

I grew up on Malawah. I’m not Yemenite but in Israel it’s very easy to find this staple in the supermarket. I guess only Ashkenazis buy it, because the real Yemenites make it from scratch 🙌🏻. It is the most crazy delicious treat of all time. Malawach resembles a thick pancake (similar to scallion pancake) but consists of thin layers of dough brushed with butter and cooked flat in a frying pan. It is flaky, crisp, and perfectly paired with grated tomatoes, Yemenite schug, and hard boiled potatoes.

🐠 Arabic Ceviche

This is a layered FLAVOR blast. This ceviche is our version of a gorgeous dish we tasted in Northern Israel, at an Arabic restaurant in Akko. Here the flavors of the sea are paired with a tangy labneh, fresh za'atar, pistachios, herbs, thinly sliced chilis, tomato seeds and a gorgeous preserved lemon aioli. Finished with an aromatic extra virgin olive oil. Absolutely one of my favorite dishes, I've tasted this year and perfect to make for your lovers!
