Happy YASSSletter Thursday Gingis!

This Saturday we officially make our journey to Israel as a family of four (us + crazy Oliv-ster)! We will be abroad for 6 weeks and SO look forward to sharing our adventures with you: culinary & familial! We'll be sure to share with your our favorite restaurants, dishes, and generally adventures together. (Thank you for all who have voted!)

Additionally, the BenGingi community has officially hit 1 million on Tik Tok! Wahoo - thank you so much to all of you. It has been my greatest pleasure to build this world around bread with you all for the last two years. We are all bread - YASSS!

As if there isn't enough excitement already, this week in the YASSSletter we are hosting my friend, Pierce Abernathy - my fellow culinary + fashion content creator, recipe developer and Instagram DIPS reel king. I have always loved Pierce's food and aesthetic, so I am absolutely STOKED to show you all what recipes we created for you all during our collaborations.

So without further ado, the YASSSletter Agenda:

  1. 〰️ Spicy Squash Pici Pasta

  2. 🇦🇲 Armenian Matnakash Bread

  3. 🌶️ Spicy Beet + Labaneh Dip

〰️ Spicy Squash Pici Pasta

This pasta is one of my all time favorites. Hand rolled Tuscan style pasta, thick and chewy and super easy to make. All you need is flour, water, great olive oil and salt. Simply knead the dough and shape to your desire length of pasta (this pasta here is made with only one super long noodle). The sauce works so perfectly with that pasta, made by my great friend- Pierce Abernathy. Pierce is known for his love to nature, seasonal ingredients and plant based food. Together we created this pasta which we are super proud to share with you. Give it a try before squash season is out until the next year!

🇦🇲 Armenian Matnakash Bread

Another beautiful creation by Pierce and I. This time we made an Armenian bread called Matnakash which is very similar in shape to Ramazan Pidesi (recipe for that will come out closer to Ramadan) and focaccia. It has a great thin crust and soft chewy crumb. We paired it with an amazing beet & labaneh cheese dip spiced with Calabrian chili paste. They go so well together. I encourage you guys to try this bread recipe as it is very simple easy going dough to make and super forgiving in shaping.

🌶️ Spicy Beet + Labneh Dip

As part of our creation of the Mantakash bread, Pierce and I paired it with beet and labaneh dip. After roasting the beets until soft, we blended them with labaneh cheese and Calabrian chili paste. These three ingredients work so well together, creating a balanced vibrant dip. Depending how spicy you like your dip, feel free to add or take off the amount of chilis.
