Today is all about one of the best holiday treat’s I’ve ever made! Enter: The Eggnog Crème Brûlée Donut. This donut is all about technique and once you’ve got it down, you’ll be slamming these bad boys out the kitchen all holiday season long!
7 Ways to Master Your Crème Brûlée Coat!
Sugar might be challenging to get the hang of, so here are some of our go-to tips to ensure we have a solid “CRACK” each time!
Temperature Control: Use a candy thermometer to monitor the sugar syrup's temperature. Aim for a temperature of around 320°F (160°C) for a deep amber color and hard crack stage. The color of the sugar will turn from opaque to crystal clear like candy.
Patience is Key: Don't rush the caramelization process. Allow the sugar to melt and darken slowly and evenly. Overheating can lead to a bitter taste.
Consistent Swirling: Gently swirl the pan to distribute the heat and prevent hot spots. This ensures even caramelization.
Timing is Crucial: Once the desired color is reached, immediately remove the pan from the heat and have your donut ready for immediately dipping. The caramel will continue to darken and harden as it cools.
Careful Dipping: Dip the cooled donuts into the warm caramel, ensuring an even coating. Let any excess drip off before placing the donuts on a cooling rack.
Use a Non-Stick Pan: A non-stick pan will prevent the caramel from sticking and make cleanup easier.
Practice Makes Perfect: Don't be discouraged if your first attempt doesn't turn out perfectly. With practice, you'll master the art of making the perfect caramel for your crème brûlée donuts.

This week, Eat Small Plates catered and produced the Annual Hanukkah Party for The Tel Aviv Museum of American Friends at the Levy Gorvy Dayan and it was magical, y’all! From the tequila toast to the gorgeous holiday themed passed bites and from a bar full of overflowing champagne flutes to the grand finale Sufganiyot dessert station, where every donut was filled to order - this event was incredible way to ring in the holiday season!
