Everything Fried: 5 Exclusive Hanukkah Recipes!

It is officially my favorite time of year! New York is getting all dressed up for the holidays and our home decorated for our daughter's first Hanukkah & Christmas season. This Sunday marks the first day of Hanukkah, and we plan to celebrate with a feast of gourmet fried foods, a sweet & cozy story telling of the eternal flame, and the lighting of the first candle!

So just in time for the Festival of Lights (aka the "everything fried" holiday of the year), we've got our YASSSletter Hanukkah edition jam packed with stories & recipes!

📜 History + Origin: Hanukkah!

Over two thousand years ago, Antiochus, a cruel ruler of the Greek Kingdom, imposed pagan beliefs on the Jewish people. "You'll worship Zeus," he proclaimed, and set up statues to Greek idols and slaughtered pigs at the altar, dirtying the temple.

The Maccabees, a group of devastated Semitic people, were so unhappy that they refused to assimilate into the Greek culture as others had done. When an old priest, Mattityahu, and his son Yehuda bravely rose up, they risked their lives and battled the Greeks. The small band of dedicated followers eventually defeated the Greek general and his army, winning the war and protection for the Torah, a book of Jewish teachings, writings, and laws.

The Jews were overjoyed by their victory and reclaimed the temple, Beit Hamikdash. As they cleansed the holy building for rededication, only one jug of oil, blessed and sealed by the high priest, the Kohen Gadol, remained for which to light the lamp. Heads hung low when they realized this was only enough oil to keep it lit for one night.

To their amazement, that one pure jug burnt for eight nights until more containers of sacred oil arrived. "It's a miracle," the Jewish people shouted as they danced. The Hanukkah celebration grew out of their excitement about this wonderment, and each year it reassures them that strength, tenacity, and hope will always prevail.

🍓 Hanukkah Sufganiot: Dough + 3 Flavors!

Salted Caramel & Pretzel Sufgania

This year in our Hanukkah edition of the YASSSletter, we are starting off with the most important treat of all - the Sufganiot! Fried to perfection, stuffed with decadent fillings, dipped in a gorgeous glaze, and topped with the best treats! And because one kind just isn't enough, we've included three different flavors: Strawberry Sumac w. Ruby Glaze, Salted Caramel & Pretzel, and NY Cheesecake!

Each one completely unique and crazy delicious!

🥔 Swiss Rösti (Huge Latke)

This year, instead of tiny latkes, I am making Rösti - one huge Swiss Latke!

Rösti is a Swiss dish consisting mainly of potatoes, pan fried slowly in a shallow pan. There are different ways to prepare the base potatoes for Rösti, some boil the potatoes first and then grate them and others wash the potatoes multiple times. We are going to make the Rösti using a super easy method, without sacrificing any of the taste or texture! I serve my Rösti with sour cream, smoked salmon and dill. This isn't a traditional serving method but it's outrageously delicious. This year I'm going to celebrate Hanukkah with these awesome latkes, they are incredible.

🫒 Tunisian Fricassé

Last, but absolutely not least in our Hanukkah line up is one of my all time favorites - Tunisian Fricassé. One of the best ways to truly understand Tunisian flavors is with this Fricassé roll. This deep-fried yeasted dough is made with King Arthur's Organic AP Flour. It is stuffed with tuna, olives, harissa, pickled lemon, potatoes and pickles! Pure Tunisian goodness. It is the kind of food that you try once, and crave for always! Savory, crispy, and perfectly balanced.
