Funny how how we all seem to have that same memory siting around with friends eating fried potatoes. Some of the best memories in life are made when sharing a meal. There is always so much love circulating!
So, we had a thought. What is the most comforting vegetable?With out a doubt, hands down: POTATOES! So in today’s Yasssletter we are talking all about potatoes and how to use them to make the most cozy shareable meals ever to share with your loved ones!

History + Origin: Potatoes
Potatoes, scientifically known as Solanum tuberosum, originated in the Andes region of South America over 7,000 years ago, where they were first cultivated by indigenous peoples. Spanish explorers, like Francisco Pizarro, encountered potatoes during their 16th-century expeditions in South America and introduced them to Europe. However, their initial reception in Europe was marked by skepticism and suspicion due to their association with the deadly nightshade family.
For centuries, potatoes were primarily grown as ornamental plants in European gardens. It wasn't until the 18th century that their potential as a reliable food source began to be recognized. European governments and agronomists realized that potatoes could thrive in diverse climates and provide high yields, making them valuable for addressing food shortages and famines.
Despite this slow & modest start, potatoes eventually gained acceptance in Europe and became a staple crop. Their adaptability and nutritional value played crucial roles in their global spread, transforming a once-ignored tuber into one of the world's most important and widely consumed food sources!
Crisp, tender, and satisfying like a potato chip! This giant latke known best as Rösti can be topped with all your favorites: grav lax, Labaneh, dill, extra virgin olive oil and fresh cracked pepper.
Imagine it is Friday night and your friends are coming over and you want to cook something super flavorful but also perfect for sharing. Enter: Potato Flatbread w. Leek and Sausages made with a quick “no rise” potato flatbread base and topped with seasonal treats!
Did you know that Varenyky is one of the first meal’s Zikki ever cooked for me when we started dating? Not only that. One of our first week’s together, Zikki brought me to help her make 1,000 by hand with her and some friends for a Ukrainian Festival they were throwing! So, this recipe brings me BACK! It was an excellent dish then, and excellent now. Timeless, Classic and Perfect for a crowd!
