I don’t know about you all, but we have been eating ALOT of bread & pasta this winter. Haha. You can’t help it! When it is chilly outside all you want is a slice of sourdough with jam and butter to start the morning. Then maybe a quick pita for lunch and a big bowl of pasta for dinner.

Sometimes eating vegetables is like going to the gym. If you don’t go for a week, you sort of forget it exists, but the moment you get back on that bike for even 15 minutes you are reminded of all the positive. And just like that, you start going every day. Eating vegetables takes practice and implementation, but once you’ve made it part of your routine - thats it. You are set.

🍲 MAKE A SOUP: Making a soup is the absolute best way to ensure you get all your daily vegetable serving.

  • Leftovers Soup: On the day before your typical “grocery store day",” check the fridge for what you may have left over. You’ll be surprised to prorbably find 1 rogue potato here, 1 rib of celery there, 2 sad beets, and so on hanging out in the fridge. Dice up all the leftover veggies and out them into a pot. Sautee with olive oil and salt for two minutes (just to activate the flavors) and then add chicken stock or water to the top. Simmer for one hour. (DONT OVER COOK)

  • Add either the juice of ½ lemon or a heaping tablespoon of miso to boost flavor.

  • Let’s be honest, heading to the grocery store during the winter, is NOT fun. Walking through the farmer’s market when that winter chill is at 32F, also SUPER not fun.
