History + Origin: Tomatoes!
Gazpacho (Cold Summer Soup)
Pan Con Tomate (Toast w. Grated Tomatoes)
History + Origin: Tomatoes!
Tomato plant and root, 1613: by Basilius Besler: Showcased at Real Jardín Botánico Madrid
Tomatoes, a vibrant and versatile fruit, have a captivating history that spans thousands of years. Originating in the Andean region of South America, ancient Mesoamerican civilizations like the Aztecs and Incas were among the first to cultivate and savor various tomato varieties. However, when tomatoes arrived in Europe during the Spanish colonization of the Americas, they faced misconceptions and were deemed poisonous due to their association with the deadly nightshade family. It was only through the daring experiments of Mediterranean cooks and the popularity of Italian cuisine that tomatoes shed their dubious reputation and became a beloved global culinary sensation.
In the 19th century, tomatoes found their way to North America, where their popularity soared with the development of commercial tomato canning factories. Today, tomatoes are cherished worldwide for their diversity, ranging from sweet cherry tomatoes to savory beefsteak varieties, and are a cornerstone in countless dishes, from fresh salads to hearty stews and pasta sauces.
Gazpacho (Cold Summer Soup)
Why stop at tomatoes? Let’s make a Gazpacho that gives love to all the summer favorites. Meet Zikki’s FAVORITE food of all time. This Gazpacho pays tribute to summer tomatoes, cucumbers, and bell peppers. Plus it is an excellent way to use your left over bread!
