We’ve been going non-stop this crazy summer season, with events back to back every week - leaving us with some incredible produce to play with come Monday morning. This week we found ourselves living in abundance amongst WATERMELON!
Although T has eaten through a whole bunch of it, we still found ourselves with a whole other half of the watermelon - probably similarly to all of you. So this week, we have THREE watermelon recipes for you that have absolutely nothing to do with dessert.
So without further ado: THE WATERMELON EDITION
Scallop Sashimi w. Watermelon Gazpacho (I drank a ½L of the gazpacho on it’s own - yum!!!!)
Scallop Sashimi w. Watermelon Gazpacho
Ben and I fell in love with a Scallop Carpaccio at one of our favorite restaurants in NYC - Thai Diner. It was the first time I enjoyed a scallop raw. And every since then, it has been our go to sea creature for a bright appetizer. Paired with this kick a** watermelon gazpacho, you’ll be sure to be licking the plate once its over.
Mezcal Watermelon Cocktail
Talk about needing something deeply satiating after a very long hot day this summer. This Mezcal Watermelon cocktail is the perfect refresher!
Herby Chopped Watermelon Salad
Unexpected and absolutely fabulous. People love to pair watermelon with feta and leave it be as culinary magic, but why not take it one step further. Expose more surface area of the watermelon to zesty herbs and a preserved lemon dressing and then load it onto a creamy yogurt base. Its the fun you didn’t know you needed. This dish is down right delicious.
