Nothing says spring like freshly blossomed flowers and the color: green! This week we have recipes highlighting the best of the spring at the market: green garlic, spinach, asparagus, and more.

It's the time of year when you can simply use the entire garlic, the entire bulb, and the stalk. Most people make pesto with it, which is divine, but I thought it could be cool to take the classic garlic knots and swap the regular garlic with green garlic.

In this recipe for ricotta dumplings a pea, sorrel, and butter sauce perfectly captures the flavors of the season, combining the creaminess of ricotta with the fresh, tangy taste of sorrel and sweet, tender peas. Ricotta dumplings are super versatile and can be paired with any sauce, but this is our current favorite.

The crust, infused with fragrant thyme, adds a delightful herbaceous touch, while the filling of tender asparagus, sweet leeks, and leafy spinach offers a burst of spring freshness in every bite. I decided to blend the spinach with the eggs to give a beautiful color to the quiche rather than having a yellow quiche with green parts.
