Hello you gorgeous Gingis! Wow, oh wow has the summer flown by. But what has kept us consistently joyous is the abundance of summer vegetables! I remember few years ago, I worked at a bio dynamic farm before Ben and I moved to NY together and my job as farm chef was to do something creative with the enormity of summer vegetables, zucchini being the #1 vegetable we had in insane quantities.

When I finally thought I couldn’t think of any more zucchini recipes, I came across something truly delicious - a zucchini fritter. Pure fried perfection. Like a tiny little latke but make it zucchini. + Ben really just stepped it up with this chocolate zucchini loaf last week. Its a literall guilt free way to consume a crazy amount of chocolate. Whose not on board? Am I rite.

Anyway, let’s jump right in! To the world of the Zucchini!

History + Origin: Zucchini


Zucchini, or courgette, originated in Central and South America and was cultivated by indigenous peoples thousands of years ago. Its initial smaller, bitter form evolved into today's versatile vegetable, gaining favor in Europe during the late 19th century through Italian immigrants. Zucchini's mild taste made it a global culinary staple. In the mid-20th century, it surged in the US due to home gardening, leading to the humorous "zucchini overload" trend where excess harvests were shared. This journey highlights zucchini's rise from humble origins to a widely cherished ingredient.

"Zucchini in chocolate cake? Really?" But hold up, don't be too quick to judge! This green wonder works some serious wonders in the background. It's like a cake whisperer, adding an incredible moistness that'll have you wondering why you haven't tried this trick before. Gooooooey, tender, and perfectly satiating for any chocolate lover!

This Zucchini Fritter is the definition of fried summer perfection. Pair it with a preserved lemon aioli for dipping and a big gorgeous farmer's market salad. Voila, breakfast, lunch or dinner for your lovers!
